Basically, whey is one of the two proteins that make up milk, with the other one being casein. Whey protein can be separated from casein or formed as a by-product of cheese making. It contains all essential amino acids and is low in lactose.

How Whey Protein is Made

Step three is pasteurisation, which ensures that no harmful bacteria are in the milk. During pasteurisation, milk is boiled until it reaches its boiling point and then is instantly cooled to at a chilly 4 degrees Celsius.

In step four, the pasteurised milk is subjected to enzymes that will separate the casein from whey. The milk gets separated into two parts: liquid and solid particles. The liquid part – which contains whey, carbohydrates and fat – is sent to a manufacturing plant for further purification. This is to remove the fat, carbohydrates, minerals and water. Meanwhile, the solid particles are collected and processed as cheese.

A lot of machinery is involved in step five. During this step, the liquid whey from step four is loaded into a web of stainless steel turbines that have special filters to separate the fat and lactose from the liquid solution. This process produces whey protein liquid.

During step six, the whey protein liquid is placed in a dryer. This process dries out the liquid and separates the solids, as well as ensures that the whey doesn’t lose its nutritional value. The resulting powder may have up to 90% whey protein.

For the last step, the whey protein is carefully examined. The whey powder is put into high-speed blenders along with flavourings and other formulations for the best taste.

Types of Whey

There are three main types of whey protein available. These are whey protein concentrate, whey protein isolate and whey protein hydrolysate.
